
Grüne Neune Suppe or Gründonnerstag Suppe is a German herb soup traditionally eaten the Thursday before Easter. 9 different wild spring herbs are said to boost your energy levels after a long winter and the lent fast. I used dandelion, garlic mustard, wild garlic, daisies, plantain, ground elder, celandine, deaf nettles and stinging nettles. Some people sauté the herbs with onions in butter, before adding stock, cream and nutmeg. I prefer to add them towards the end.
